so in looking at my new 3's stereo setup, i am wondering how easy/difficult it may be to replace it. I have a pioneer dvd system/touch screen on order, but am now not sure if it's going to fit well in the center console if at all. what do u think?

It seems like you should be able to fit it

I'd like to know if there's a way to plug in a sub into the stock stereo. If anyone knows - let me know

you can use a loc tapped into the back speakers to send a signal to an amp and sub.
