I'm adding a Quart of valvoline 10-30, or 10-40(depending on the season) every 800-850 miles on my 90 lx w/176k. And i think this is normal. I almost always shift at 3,ooo to 3,500 RPM in the first 4 gears, sometimes going to 5,500. And once a week i floor it through 2nd and 3rd to keep the engine loose.
Because im adding so much i change the oil and filter every 4,500-5,000 miles, even though the manual says to do it at 7,500.
I try to keep a log on the work on my car and gas fillups and I'm getting 25-26mpg dropping to 21-23 in the winter.
I LOVE THIS CAR!!!!

I add a quart every couple of weeks or so, but my valve cover gasket is shot.

The valve guide seals are tired too, but they only act up in cold weather.

Give it a little time, and it will start leaking. It doesn't take much from the rear main seal to make a big mess. With your low mileage (and obviously regular oil changes), you shouldn't have oil burn problems for a long while.

I try to change my oil and filter every 3,000 miles. I thought that was the general rule. Also, from what I heard, you should check your oil after each tank of fuel you burn. Davard... how much did that GTR motor cost, and where did you get it?
